Lemon Poppy "Chia" Seed Jumbo Muffins

Ingredients

  • 4 Scoops  (1 C) Devotion Nutrition Angel Food Cake Protein powder
  • 1 C Egg Whites
  • 1 C Unsweetened Applesauce
  • 1 TBSP Lemon extract or lemon concentrate, can also add some lemon zest for more flavor
  • 1/2 C Plain Non-fat Greek yogurt, optional (adds more moisture)
  • 2 TBSP Chia seeds
  • 2 tsp, Baking powder

GLAZE, optional, not needed for grab and go 

  • ½  Scoop Devotion Angel Food Cake Protein
  • ½ tsp, Lemon Extract
  • 3 TBSP water, to glaze consistency

Preparation

Combine all dry ingredients in a bowl. Next, add the wet ingredients and stir to make your batter. 

Spray a jumbo muffin tin and add your batter. Bake at 350 for approximately 18-23 minutes or until just barely set in the center. do not OVERBAKE. You may need to check them every minute after 18.

Allow to cool 2-3 minutes then remove from the pan . If using the glaze add while still slightly warm and allow to cool. 

Once completely cooled, you can store on the counter for up to 3 days or freeze to keep moist
