Protein Iced Lemon Loaf
- 1 scoop Devotion Angel food cake protein
- 2 TBSP coconut flour
- 2 TBSP almond flour
- 1/4 C almond milk
- 1 whole egg
- 1/2 C egg whites
- 1 TBSP lemon pudding mix
- 1 TBSP lemon zest
- 1 squeeze of lemon juice
- 1 tsp baking powder
Preheat conventional oven to 350F and spray your mini loaf pan. Mix all the dry ingredients together first, then add your wet to dry. Mix well and spoon into your loaf pan. Bake approximately 25 minutes. Be careful not to overcook. Remove from oven and allow to cool COMPLETELY before slicing and serving.
Icing
- 1/4 c Angel food cake
- 1 tsp swerve confectioners sugar
- + water to icing consistency
Makes 2 mini loaves.
