NO BAKE PUMPKIN PIE TRUFFLES

 

Truffles:
  • 1 ½ scoops Angel Food Cake Protein powder
  • 3 stick packs Pumpkin Pie Flex Flavors
  • ½ C coconut flour
  • 1 tsp cinnamon
  • 3 tbsp pumpkin puree'
  • ½ C unsweetened applesauce
  • 1 tsp vanilla extract
  • ¼ C unsweetened vanilla almond milk

Icing:

  • 1 tbsp melted coconut oil
  • ½ scoop Angel Food Cake Protein powder

Mix dry ingredients well.  Add wet to dry and mix into soft dough.  Scoop into balls and place in the freezer for about 20 minutes.  Melt coconut oil and whisk in protein powder, then drizzle over set truffles.  Sprinkle with cinnamon if desired.  Store in the fridge for up to 4 days. Enjoy!
