Preparation

in a bowl, mash the blueberries add syrup, lemon juice, cornstarch + water to combine. Microwave for 1-2 min until the filling begins to thicken. Fold in protein powder, set aside. Unfold the thawed pastry sheets and spread the filling onto the one of the pastry puff sheets. Cover with second sheet and cut in half. Then use a fork to pierce down all edges, making two poptarts. Air fry for ~10 min on 400F or until golden brown.
