Protein Buckeye Bites

 Ingredients for Bites: Ingredients for Chocolate coating:
  • 1 TB melted coconut oil
  • 1.5 TB unsweetened cocoa powder
  • 1/2 TB confectioners powdered sweetener


Method: Combine first four ingredients and mix well until it reaches a firm dough consistency. Form into small bite-size balls. Freeze while you make the chocolate coating. Mix coconut oil, cocoa and sweetener together until dissolved. Dip each frozen bite into chocolate coating and cover, leaving a little of the top uncovered. Remove carefully with a fork. Place on parchment paper and put back in freezer to harden. Any remaining Buckeyes may be stored in an airtight container in the refrigerator for up to a week or frozen for several weeks.   Recipe makes 18 bites

    2.7 grams of protein per bite. You would have to eat a lot to get much protein, at 52.5 cals per bite. Yikes, turns them into fat bites!
