Combine all dry ingredients in a bowl. Next, add the wet ingredients and stir to make your batter.
Spray a jumbo muffin tin and add your batter. Bake at 350 for approximately 20-25 minutes or until just barely set in the center. do not OVERBAKE. Allow to cool 2-3 minutes then remove from the pan and enjoy!!!!
Once completely cooled, you can store on the counter for up to 3 days or freeze
