Butterscotch Dipped Protein Ice Cream

Ingredients: Protein Ice Cream: Ingredients for Butterscotch Shell Topping:
  • 1 tsp melted coconut oil
  • 1 TB PB2 powdered peanut butter
  • 1 tsp butterscotch dry sugar free pudding mix

Method: For the ice cream, mix softened ice cream with protein powder in a bowl. Place back in freezer to firm. Next, mix all topping ingredients well until smooth. Scoop firm protein ice cream into cone. Spoon topping over ice cream. It will harden quickly. *Optional: place a sugar free dark chocolate piece on top while topping is still wet. Place in freezer for just a few minutes to get that crunchy shell.
