Sweet Potato Pie Pumpkin Bread
- 2 scoops Sweet Potato Pie protein powder supplement
- 1 C all purpose flour
- 2 tsp pumpkin pie spice
- 1 C pumpkin purée
- 1tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/8 tsp ground nutmeg
- 1/4 C monk fruit (1:1 sugar replacement)
- 1/4 C Fage total 0 Greek yogurt
- 2 eggs
- 1tsp vanilla
Preheat oven to 350 degrees.
Mix all dry ingredients in medium mixing bowl. In a second bowl, mix all wet ingredients together. Slowly add wet to dry and mix well until well combined and batter is smooth.
Prepare your pan by spraying with non-stick spray or by lining it with parchment paper. Pour batter into prepared 8x5 loaf pan and bake at 350 degrees for approximately 60 - 70 minutes (toothpick test center).
Remove from oven and cool for 10 minutes.
Yields 8 slices/servings.
