Sweet Potato Pie Protein Mini Loaf
- 1 scoop Sweet Potato Pie Protein Powder
- 1/2 C Pure Pumpkin, canned (or mashed sweet potato)
- 3 TBSP Unsweetened Almond Milk
- 2 TBSP Egg Whites
- 2 TBSP Coconut flour
- ½ tsp Vanilla Extract
- ½ tsp Baking powder
- ½ tsp Cinnamon
- Dash of salt
Mix all ingredients in a small mixing bowl and pour into a prepared mini loaf pan (sprayed with non-stick). Add optional toppings like crushed nuts, chocolate chips, brown sugar substitute. Bake at 350 for approximately 45 minutes. Remove and cool. Slice and enjoy!
