Sweet Potato Pie Protein Mini Loaf

  • 1 scoop Sweet Potato Pie Protein Powder
  • 1/2 C Pure Pumpkin, canned (or mashed sweet potato)
  • 3 TBSP Unsweetened Almond Milk
  • 2 TBSP Egg Whites
  • 2 TBSP Coconut flour
  • ½ tsp Vanilla Extract
  • ½ tsp Baking powder
  • ½ tsp Cinnamon
  • Dash of salt

 

Mix all ingredients in a small mixing bowl and pour into a prepared mini loaf pan (sprayed with non-stick). Add optional toppings like crushed nuts, chocolate chips, brown sugar substitute. Bake at 350 for approximately 45 minutes. Remove and cool.  Slice and enjoy!

Yields 1 mini loaf.
