Sweet Potato Pie Protein Bars

Crust

  • 2 scoops Buttery Blend protein powder supplement
  • 1 C ground pecans
  • 1/2 C brown sugar substitute
  • 2 TBSP melted coconut oil
  • 1/2 C liquid egg whites

Filling

  • 2 scoops Sweet Potato Pie protein powder supplement
  • 2 large sweet potato, mashed
  • Cinnamon to taste

Add all crust ingredients to a medium size bowl and mix until well combined. Using clean hands, press crust firmly onto the bottom of a large baking pan (13x 9 works great for bars.)  Bake the crust 8-10 min at 350.  Remove from oven and let cool.

While the crusts are baking, combine the sweet potato mash with the scoops of protein and add cinnamon. Spread the mixture over the crust evenly. Adding the Devotion Buttery blend crumble is also a delicious way to top these bars.

Top with pecans, if desired.  Place the pan back into the oven for 20-30  minutes.  Once cooled, on the counter or even better in the fridge, cut into bars and store in a container in the fridge or freezer.
