Sweet Potato Pie Pancakes with Maple Glaze

INGREDIENTS:
PANCAKES
-1 C pumpkin puree
-2 C oat flour
-2 C almond flour
-2 eggs
-1 TBSP coconut oil, melted
-1/2 tsp salt
-1 C soy milk
-1 tsp vanilla
-1 tsp pumpkin spice
-2 scoops Devotion Nutrition Sweet Potato Pie protein powder
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 C walnuts, chopped
MAPLE DRIZZLE
-4 oz low fat cream cheese, room temperature
-1/2 C sugar free maple syrup
-1/2 C substitute confectioners sugar
-1 tsp vanilla
-Soy milk (to desired consistency)
-Pumpkin spice and walnuts for garnish
INSTRUCTIONS:
1) Mix all ingredients together just until mixed and homogenous (don’t over mix!)
2) Scoop about 1/3 cup of batter onto hot griddle and flip once brown on each side.
3) While pancakes are cooking, make maple drizzle by whisking all ingredients together until icing consistency.
4) To serve, layer each pancake while warm with about a tablespoon of glaze, a sprinkle of pumpkin spice, and 1 tsp of chopped walnuts. Drizzle lightly with maple syrup as desired.
