Protein Birthday Cupcakes

Ingredients for Cake base:
  • 3 tbsp coconut flour
  • 1.25 tsp baking powder
  • Pinch sea salt
  • 3/4 cup unsweetened almond milk
  • 1 whole egg
  • 1 egg white
  • 3 packets Birthday Cake Flex Flavor
Chocolate cupcake ingredients: Vanilla cupcakes ingredients: Chocolate frosting ingredients: Vanilla frosting ingredients:

Method: Preheat oven to 350 degrees. Mix cake base in one bowl. Mix chocolate and vanilla ingredients in 2 separate bowls, for a total of 3 bowls. Mix half cake base into each of the other bowls. Stir until fully incorporated. Put 6 cupcake wrappers into a muffin tin. Spray with Pam before adding batter. Fill 3 wrappers with the chocolate batter, and 3 wrappers with your vanilla batter. Bake for 12 - 15 minutes or until cooked through. Makes 6 cupcakes. 3 chocolate, 3 vanilla. For frosting, mix frosting ingredients in 2 separate bowls. And spread frosting evenly over completely cooled cupcakes. *Optional garnish (not included in macros): Sprinkles

    Do you have a cake recipe? I guess it would be similar to the cupcake recipe but Im such a clueless cook I’m afraid to try and figure it out on my own:)

    Hi Kathy, Thanks for reaching out. If you subtract the fiber content from the carb content for any given recipe that should give you a pretty close sugar content. Hope that helps.

    Hey Nance, You have to try this mug cake recipe. This one is PB&J but you can use different flavors and do not have to include the icing. It’s super simple and delicious!…protein-mug-cake/
