Devotion Mocha Protein Cake

When your ready to put the apron on and step up your baking to the next level, this Mocha Protein Cake is just the recipe to follow. Your friends will never believe it's actually a protein cake.

Ingredients: Cake: 1.5 cup Devotion Brownie Batter protein powder 1/2 cup flour of choice 1/2 tsp baking soda 1/2 tbsp creatine powder (optional) 1/3 cup turbinado sugar (or sweeter of choice) (** The amount of sweeter added will depend on personal preference. Continually taste the batter, adding sweeter to taste, up to 1/3 cup). 1/2 cup unsweetened applesauce 2 large eggs 1 tsp vanilla 3/4 cups milk of choice (we recommend coconut or almond milk) 1/4 cup brewed coffee 2/3 cup edible coffee treats (such as Coffee Thins) (optional) Ganache: 1/3-2/3 cup dark chocolate, semi-sweet chocolate, or cacao nubs 1/4 cup milk of choice 1 TBSP brewed coffee 1-2 scoops brownie batter protein powder Frosting: 1/2 cup brewed coffee 8oz serving Mocha Cave Butter 4-5 scoops Devotion Angel Food Cake protein powder 1/4 cup milk of choice 1/2 tsp maple syrup 2 TBSP powdered sweetener (optional)

 Method: Cake: Preheat oven to 350 degrees. In mixer, add applesauce, milk, eggs, coffee, and vanilla. Turn mixer to low. Combine protein powder, flour, baking soda, creatine powder, and sweeter in bowl. Slowly add to mixer. Add edible coffee. Mix on low until all ingredients are combined and batter is smooth."Grease" two 6x2 round inch pans or 8x4 rectangular pans with coconut oil (or oil of choice) and protein powder. Evenly divide batter among both pans, smooth until even. Bake for 35-40 min. Remove from oven and let cool. Ganache: Microwave milk until warm. Add chocolate, covering bowl for 2 min until chocolate is soft and melted. Stir in brewed coffee and place in refrigerator until ganache hardens (the ganache will harden to a pudding-like consistency). Around 10-15 min. Remove from fridge and stir in protein powder until you reach a thick, even consistency. Frosting: Combine coffee, mocha butter, milk, maple syrup and sweetener in mixer. Slowly add protein powder until reach a thick, smooth consistency. Assembling the cake: Place one layer of cake on servicing dish. Spread chocolate ganache. Place second layer of cake on ganache.
