Coconut Biscotti Protein Cookies

Ingredients for Cookies:
  • 1/2 scoop Devotion Brownie Batter protein
  • 2 TB sugar free jello chocolate pudding mix (dry)
  • 1 egg white
  • 1 packet Coconut Biscotti Flex Flavors
  • 2 TB unsweetened shredded coconut (reserve 1 TB for garnish for top and sides of cookies)
  • 1 TB coconut oil
  • 1 TB coconut flour
  • 1 TB unsweetened non-dairy milk
Ingredients for Frosting:

Method: Mix well all cookie ingredients, reserving 1 TB shredded coconut. Form into small balls and press down lightly onto non-stick cookie sheet. Top half of the cookies with just a sprinkle of shredded coconut. Bake at 325 degrees for about 5 minutes. Mix frosting ingredients while cookies are baking. Use plain cookies as the bottoms of the "sandwiches". Once you spread frosting, press down so the frosting comes out of the sides a bit and dip into remaining coconut so it will stick. Voilà!
